Ratatouille with chicken and brown rice

460gr vegetables p.p.
Ingredients
2 persons
1 small aubergine |
150g diced tomatoes without salt |
parsley |
celery or 1 spring onion |
1 tablespoon oil |
1 chicken breast |
½ tablespoon thyme |
1 small courgette |
150g brown rice |
1 green and 1 yellow pepper |
1 clove garlic |
Preparation
1. Cook the brown rice until tender according to the instructions on the packet.
2. Clean the vegetables. Cut the peppers into strips, the aubergine and courgette into half slices and the garlic into shreds.
3. Cut the chicken breast into narrow strips. Brown the chicken in the hot oil.
4. Add all the vegetables with the thyme and the diced tomatoes with some juice. Braise for 10 minutes until tender.
5. Wash and chop the parsley. Mix it into the cooked rice.
6. Season the ratatouille with some pepper and serve with the rice.
