Homemade slush puppy of kiwi, apricot and mint

Ingredients
8 persons
500g yellow kiwi |
400g ripe apricots |
a few mint leaves |
1 lime (for the juice) |
Preparation
- Keep one yellow kiwi aside. Peel the remaining kiwis, cut into pieces and blend into a smooth puree.
- Wipe the apricots clean, cut them in half, remove the seeds and mix them with the mint leaves. Add a dash of lime juice to both purees.
- Put the two purees in separate storage boxes or bowls and put them in the freezer.
- Leave in the freezer for 2 hours, working the mixture with a fork to break up the ice crystals.
- Put another 2 hours in the freezer and break the ice crystals again until you reach the desired texture. Store in the freezer until serving time.
- Serving tip: Put the two colours in a nice glass. Decorate with slices of kiwi and mint leaves.
