Leek with goat cheese from the oven

375gr vegetables p.p.

Ingredients

2 persons

600g leeks
50g fresh goat's cheese
3 tablespoons semi-skimmed yoghurt
1 beef tomato

Preparation

1. Clean the leeks and cut the vegetables into ± 5 cm diagonal pieces.
2. Cook the leeks in water just until tender.
3. Skin the beef tomato and cut the flesh into cubes.
4. Put the leeks with the tomato in an ovenproof dish.
5. Mix the goat cheese with the yoghurt and divide over the vegetables.
6. Lightly brown the cheese under the grill.
Menu suggestion: Delicious with roasted chickpeas and potatoes.
