Leek with prunes and goat cheese

300gr vegetables p.p.
Ingredients
2 persons
10 dried soaked prunes without stone (pruneaux) |
600g thin leeks |
2 dl stock with less salt |
80g fresh goat cheese |
pepper |
Preparation
1. Halve the plums and pour the stock over them, keeping 2 tablespoons of stock.
2. Clean the leeks (including the green part) and cut into approx. 3 cm pieces.
3. Heat the plums in the pan for 2-3 minutes. Let them simmer for 5 minutes.
4. Put the leeks in a dish, add the 2 tablespoons of stock and fry for about 4 minutes. Stir the leeks once halfway through. Allow the leeks to cook for about 2 minutes.
5. Stir the plums into the leeks and season with pepper. Sprinkle the cheese on top and reheat for about 1 minute. Enjoy your meal!
