Meatballs in green

425gr vegetables p.p.
Ingredients
2 persons
150g lean minced beef |
1 small onion |
200g green beans |
½ bush celery |
1 green pepper |
1 tablespoon liquid margarine |
1 tablespoon tomato puree |
1 tablespoon olive tapenade |
Preparation
1. Chop the olives small.
2. Peel and coarsely grate the onion.
3. Mix the minced meat with the tapenade, grated onion and some pepper.
4. Shape into small balls and leave them to set in the fridge for 15 minutes.
5. Clean the vegetables.
6. Cut the celery into bows, break the green beans once and cut the pepper into strips.
7. Brown the minced meat in the hot margarine.
8. Briefly fry the tomato puree with it.
9. Add the vegetables with 200 ml water and stew the vegetables and minced meat for about 10 minutes.
Serving suggestion: delicious with brown rice.
