225gr vegetables p.p.

Ingredients

2 persons

600 grams of salsify
vinegar
2 spring onions or piece of leek
400-500 grams of cooked potato slices (refrigerated section)
25 grams of walnuts
2 eggs
100 grams of semi-skimmed thick yoghurt
thyme
2 tablespoons of grated 30-plus mature cheese

Preparation

Want to get started with salsify but have no idea what to do with it? Not to worry! It takes some time,but you are guaranteed to enjoy this oven dish with salsify, a personal recipe from Merle from the Nutrition Centre.

  1. Scrub the sand from the salsify. Peel the salsify with a peeler. Cut them into pieces and immediately put them in water with a splash of vinegar against discolouring.
  2. Boil the salsify in water for 15 minutes.
  3. Preheat the oven to 180 °C.
  4. Clean the spring onions or leeks and cut into rings.
  5. Put the potato slices in an ovenproof dish and divide the cooked salsify and spring onion over them.
  6. Coarsely chop the walnuts and sprinkle them over the salsify.
  7. Beat the eggs and whisk into the yoghurt. Add some thyme and pepper. Spread this over the salsify.
  8. Sprinkle the grated cheese on top.
  9. Let the dish get hot in the hot oven for about 30 minutes.

Leftover yoghurt?
Do not throw away yoghurt immediately after the THT date has expired. Look, smell and taste a little to judge the quality.
Grate half a cucumber and squeeze a clove of garlic. Stir in yoghurt for a quick tzatziki. Eat the tzatziki as a sauce with a hot meal or with bread.
