Poached egg with yellow kiwi, ham and spinach

Ingredients
4 yellow kiwis |
4 fresh eggs |
50g fresh (baby) spinach |
4 slices of cooked ham (about 60g) |
4 tablespoons of olive oil |
2 tablespoons of lemon juice |
4 slices of wholemeal bread |
8 sprigs of chives |
500g semi-skimmed yoghurt |
freshly ground pepper |
Preparation
- Cover a small glass with cling film (15 x 15 cm), grease with oil and break the egg into the glass. Fold closed into a small packet by gently rolling up the edges of the cling film and holding it together with a rubber band. Place the packet in boiling water for 4 minutes. Do the same with the other eggs.
- Mix the oil, lemon juice, chopped chives and freshly ground pepper. Place a slice of wholemeal bread on each plate and top with spinach. Pour a little dressing over the spinach and bread and top with a slice of ham. Place the poached egg on top of the ham and season to taste.
- Serve with whipped yoghurt and diced kiwi.
