Pumpkin with chicken

300gr vegetables p.p. & 70gr fruit p.p.
Ingredients
2 persons
250 g chicken breast |
1 onion |
1 tablespoon masala (Indian spice mix) |
2 skinned beef tomatoes |
200 g diced pumpkin or patisson |
1 clove of garlic |
1 diced apple |
2 tablespoons sultanas |
1 tablespoon oil |
150 - 200 g brown rice |
1/2 chicken stock cube with less salt |
Preparation
1. Cut the chicken breast into pieces and sprinkle with garam masala.
2. Peel and chop the onion.
3. Chop the tomatoes.
4. Heat the oil in a frying pan. Briefly fry the chicken breast. Add the onion and fry briefly. Add the tomato, pumpkin pieces and diced apple. Squeeze the garlic clove on top. Mix everything together. Add the sultanas, rice, stock cube and 2 dl water. Bring to the boil and simmer gently with the lid on for about 15-20 minutes. Enjoy!
