Purple pointed cabbage salad with smoked salmon, rocket, tomato and avocado

270gr vegetables p.p.
Ingredients
1 purple pointed cabbage |
30 grams arugula |
6 cherry tomatoes |
1 avocado |
100 grams smoked salmon |
2 tablespoons lemon juice |
2 tablespoons olive oil |
2 tablespoons parsley(chopped) |

Preparation
Colour splashes off your plate with this salad with purple pointed cabbage and smoked salmon! Delicious as a light lunch salad.
1. Halve the pointed cabbage and remove the hard core. Cut the pointed cabbage into narrow strips. Cook the strips in boiling water for 4 minutes until al dente or steam the cabbage in a steamer for 4 minutes. Then rinse with cold water and drain well.
2. Halve the tomatoes and dice the avocado. Add the cabbage, lemon juice, olive oil and parsley and mix together. Season with freshly ground pepper.
3. Divide the salad between plates and serve with thinly sliced smoked salmon and rocket.
Tip: serve with some low-fat cottage cheese.
