Rainbow wrap with spicy dipping sauce

215gr vegetables p.p.
Ingredients
1 head of iceberg lettuce (assume 2 wraps per serving) |
1 carrot peeled and julienne sliced |
1/2 cucumber thinly sliced |
1/2 mango thinly sliced |
200 g red cabbage thinly sliced |
30 g vegetable sprouts |
5 g fresh coriander finely chopped |
5 g fresh mint finely chopped |
FOR THE DIPSAUS: |
1/2 lime juice |
150 ml low-fat yoghurt |
2 tsp sambal |
1 tsp ginger powder |
Preparation
1. Mix the chopped coriander and mint together in a bowl.
2. Mix all ingredients for the dipping sauce in a bowl.
3. Place a sheet of iceberg lettuce on a cutting board and top it in the middle with red cabbage, cucumber, carrot, mango and the fresh herb mixture. Gently roll up the wrap. Repeat until you run out of lettuce and filling. With this, you will make about 8 wraps.
4. Serve together with the dipping sauce!
