Ricotta spread with jujube and tangerine

10gr vegetables p.p. & 70gr fruit p.p.
Ingredients
2 persons
200g ricotta |
2 pieces of dried jujube fruit |
2 tangerines |
handful arugula |
pepper |
1 teaspoon olive oil |
Preparation
That's something different on your sandwich: a ricotta spread with jujube (red dates) and tangerine. This recipe is simple to make and a colourful feast on your plate!
- Remove the stone and cut the jujube into small pieces
- Cut 1 tangerine into small pieces and squeeze the other one
- Mix the jujube fruit with the tangerine juice and leave this dressing to stand for a while
- Sprinkle the ricotta with pepper (to taste) and spread on a flat plate
- Place the tangerine pieces on the ricotta and finish with a handful of rocket salad
- Spoon the jujube/mandarin dressing over the top and then drizzle with the olive oil.
Serving suggestion: serve on a slice of wholemeal bread
Tip: You can also replace the jujube with "ordinary" dates
