10gr vegetables p.p. & 70gr fruit p.p.

Ingredients

2 persons

200g ricotta
2 pieces of dried jujube fruit
2 tangerines
handful arugula
pepper
1 teaspoon olive oil

Preparation

That's something different on your sandwich: a ricotta spread with jujube (red dates) and tangerine. This recipe is simple to make and a colourful feast on your plate!

  1. Remove the stone and cut the jujube into small pieces
  2. Cut 1 tangerine into small pieces and squeeze the other one
  3. Mix the jujube fruit with the tangerine juice and leave this dressing to stand for a while
  4. Sprinkle the ricotta with pepper (to taste) and spread on a flat plate
  5. Place the tangerine pieces on the ricotta and finish with a handful of rocket salad
  6. Spoon the jujube/mandarin dressing over the top and then drizzle with the olive oil.

Serving suggestion: serve on a slice of wholemeal bread

Tip: You can also replace the jujube with "ordinary" dates
