380gr vegetables p.p. & 50gr fruit p.p.

Ingredients

300 g chicken breast
1 onion chopped
3 diced red yellow and green peppers
1 diced courgette
250 g sliced mushrooms
1 tsp chilli powder
3/4 tsp cumin powder
3/4 tsp garlic powder
3/4 tsp onion powder
1/2 tsp paprika
200 g diced pineapple in juice 6 whole-wheat wraps
2 avocados finely mashed
1 lime squeezed plus extra for garnish
80 g fresh goat cheese for garnish (or grated 30+ cheese)
Coriander or parsley finely chopped for garnish
Low-fat cottage cheese to serve with it
Olive oil
Pepper

Preparation

Summer on your plate! That's what these spicy fajitas with chicken and peppers from Brenda Kookt are. Wraps packed with colourful vegetables. A feast for the eyes, and for the mouth. Because these chicken fajitas contain lots of flavour!

1. Heat a frying pan, wok or large frying pan on the fire with a little oil. Fry the strips of chicken fillet on all sides. Then add the onion, vegetables and spices to the pan. Stir well and fry the vegetables al dente for 15 minutes. Season with pepper.
2. Finally, stir the pineapple (without the juice) and lime juice through the vegetables and heat briefly.
3. Meanwhile, heat the wraps according to the instructions on the packet.
4. Spread the wraps with avocado and top with the spicy chicken mixture.
5. Top the wraps with extra lime juice, crumbled goat cheese, coriander or parsley and a spoonful of cottage cheese.

Tips:

Prefer to eat a vegetarian fajita? Replace the cubed chicken breast with 300 grams of kidney beans, add these along with the pineapple.

In this recipe, the chicken is fried with the vegetables, you can also do this in a separate pan so you can serve separately.

Note: this recipe is for two adults and two children, adjust the quantities slightly for four adults.
