Stir-fried chicory

340gr vegetables p.p.
Ingredients
2 persons
piece of leek or 2 spring onions |
1 tablespoon peanuts |
600g chicory |
1 tablespoon oil |
1 tablespoon soy sauce with less salt or soy sauce |
Preparation
1. Coarsely chop the peanuts.
2. Clean the chicory and cut it into strips.
3. Cut the piece of leek or spring onion into narrow rings.
4. Heat the oil in a wok and fry the leeks until soft.
5. Add the chicory and stir-fry for a few minutes until the vegetables have slightly shrunk.
6. Season with pepper and soy sauce and sprinkle with the chopped peanuts.
Menu suggestion: Delicious with egg and mashed potatoes.
