Wood carrots with parsley butter

225gr vegetables p.p.
Ingredients
2 persons
4 sprigs of parsley |
1 lemon |
1 clove of garlic |
pepper |
450 g spring carrots |
1 1/2 tablespoons semi-skimmed unsalted butter |
Preparation
1. Chop the parsley over a small bowl.
2. Scrub the lemon thoroughly under running water. Grate about 1 teaspoon of the lemon's yellow peel over the parsley. Peel and squeeze the clove of garlic over the parsley and stir in the butter. Season with pepper. Leave to set in the fridge for about 1 hour.
4. Clean and chop the carrots.
5. Gently cook the carrots in a pan with a little water until tender. Drain the carrots and place in a bowl.
6. Spread the parsley butter over the carrots. Enjoy your meal!
