The taste of 2025: these recipes we cooked en masse
29 January 2026
2025 was the year we massively chose tasty, vegetable-rich dishes that are not only nutritious, but also easy to make and perfect for everyday eating. From simple side dishes to festive bowls to share, these recipes topped in popularity on Veggipedia.co.uk. Find out the stories behind last year's five favourites!

1. Braised leeks: the comfort side dish of the year
Braised leeks might have been the discovery of 2025. This simple but flavourful side dish of gently braised leeks with thyme and garlic goes with practically any meal. From potatoes and meatballs to fish and fried chicken. The leeks are simmered slowly so that their natural sweetness comes to the fore, creating a silky texture and rich flavour.
Tip: Make extra immediately, this dish is delicious even the next day!

2. Stir-fried courgette: quick & seasonal
Another favourite recipe of 2025 was the stir-fried courgette. The dish combines courgette with a touch of ginger, garlic and toasted sesame seeds for a light, fresh flavour. The courgette retains a nice bite through stir-frying, making it ideal as a quick side dish or as part of a larger meal.
Tip: Serve with mashed potatoes or a (vegetarian) schnitzel for a complete meal.

3. Chinese cabbage with chicken: crunchy yet nutritious
For those in the mood for a nutritious meal with an Oriental twist, Chinese cabbage with chicken was at the top of the list. In this dish, the cabbage is briefly stir-fried with tender pieces of chicken breast and aromatic spices such as curry and ginger powder. The result? A crunchy, light meal that goes perfectly with unpolished rice or noodles.
Tip: Add the Chinese cabbage only at the last moment. Then it stays fresh and crunchy and retains its light, sweet flavour.

4. Oven dish with salsify: autumn on your plate
In the colder months, the oven dish with salsify was a real hit. This casserole combines tender salsify with potato slices, walnuts and a creamy yoghurt-egg cheese mix. Ideal as a cosy, warming main meal.
Tip: Before peeling salsify, rub your hands with some lemon juice or oil. This prevents discolouration and sticky hands.

5. Festive fruit bowl: fresh end to the meal
Last but not least: the festive fruit bowl. This cheerful dessert or snack became very popular for parties, birthdays or summer gatherings. Fresh strawberries, raspberries, melon, mango and redcurrants form the base, supplemented with carbonated mineral water and cassis for a sparkling twist.
Tip: Just before serving, finish the fruit bowl with the sparkling water. This will keep the fruit fresh and give the bowl that festive sparkle.
