The date belongs to the stone fruits. Dried dates are readily available. Increasingly, fresh or frozen dates are also available. Fresh dates taste like honey and are less sweet than dried ones. Dried dates are cloyingly sweet. The so-called Medjool dates are known as the Mercedes among dates. Big, buttery soft and very tasty.

Fresh or thawed dates will keep for 2 days in a plastic bag in the fridge.
Dried dates have a long shelf life, up to months. Store them in a dry, cool place. If stored for a very long time, they can dry out and turn sugary. This makes them taste less good, but they are still edible.
Preparing
Remove the stone before use. Cut the fruit lengthwise and remove the stone. This is usually very easy.
The skin is edible, but can be a bit tough. For salads, it is therefore more convenient to remove the skin.
