



Sauerkraut




Most vegetables go to shops fresh from the land or greenhouse. Sauerkraut doesn't. Sauerkraut starts as white cabbage. The outer leaves and hard core are removed. The rest is cut into fine strips. The sliced white cabbage is lightly salted. Sauerkraut is digestible, mildly sour in flavour and rich in vitamins. It is best to keep pre-packed sauerkraut cool and dark.

Storage
You usually buy sauerkraut pre-packed in a 500-gram bag. You can find the best-before date on the packaging. Keep sauerkraut cool and preferably in the dark.
An opened pack of sauerkraut can be kept in the fridge for about 5 days.
Leftover cooked sauerkraut can be kept in a sealed container in the fridge for 2 days or in the freezer for 3 months.

Boiled sauerkraut
Refrigerator: 2 days
Frozen: 3 months
Cleaning sauerkraut
You don't need to clean anything on sauerkraut. Sauerkraut is ready to use right away.
Preparing sauerkraut
Slice the sauerkraut a little finer if you find it too coarse. If necessary, you can loosen the sauerkraut with a fork.
You can boil sauerkraut. Or stew it with a little water and a knob of soft margarine.

Cooking: approx. 25 minutes
Microwave oven: 10 - 15 minutes
Braising: 8 - 10 minutes
