Arugula tomato salad

Arugula tomato salad

165gr vegetables p.p.

Ingredients

2 persons

10 basil leaves
5 seedless olives
½ press orange
1 bag (75g) of rocket lettuce
250g cherry tomatoes
1 tablespoon of oil
1 clove of garlic
1 teaspoon of mustard

Preparation

1. Squeeze the orange.
2. Squeeze the clove of garlic over a bowl.
3. Stir in the mustard and make a dressing with the orange juice and oil.
4. Wash the vegetables and halve the tomatoes.
5. Wash the basil and roughly tear the leaves.
6. Halve the olives. Mix everything together.

Menu suggestion: Delicious with cubes of fried tofu with mushrooms and brown rice.
