Courgette fritters

350gr vegetables p.p.
Ingredients
2 persons
1 teaspoon grated lemon peel |
3 eggs |
10 sprigs of chives |
3 tablespoons flour |
celery thyme or dill |
2 tablespoons liquid margarine |
2 small courgettes (approx. 700 grams) |
Preparation
1. Wash the courgettes and grate them medium-fine.
2. Put the courgette grater in a colander and let it drain for 15 minutes. Then squeeze out as much moisture as possible.
3. Beat the eggs in a large bowl.
4. Mix in the grated lemon zest, flour and small chopped herbs. Add the well-squeezed courgette and season the mixture with pepper.
5. Heat some margarine in a non-stick frying pan.
6. Using 2 spoons, spoon 3-4 mounds of the mixture into the pan.
7. Fry the fritters for 5-6 minutes until cooked and light brown.
8. Fry the rest like this and keep them warm on a plate on a pan of hot water.
Menu suggestion: Delicious with mashed potatoes.
