Couscous salad with yellow kiwi, broccoli and mint
With seasonal products

190gr vegetables p.p. & 40gr fruit p.p.

Ingredients

2 yellow kiwis
200g whole-wheat couscous
3 carrots
200g broccoli
1 cucumber
1 onion
3 sprigs fresh parsley
3 sprigs fresh mint
4 tablespoons olive oil
2 (squeezed) limes
Pepper

Preparation

  1. Place the couscous in a bowl of boiling water. Prepare according to instructions on the label. Leave to cool.
  2. Peel the carrots and cut into cubes. Cut the broccoli into very small bushes. Blanch the carrots and broccoli in boiling water for 3 minutes.
  3. Drain and rinse with cold water. Peel the yellow kiwis and cucumber and cut into cubes. Peel the onion and chop finely.
  4. Pick the leaves of the herbs and chop finely. Mix the oil, lime juice and pepper. Put all the vegetables and the kiwi in a large salad bowl. Add the herbs and dressing. Mix well.
  5. Leave to cool in the fridge for a few hours and serve.
