Couscous salad with yellow kiwi, broccoli and mint

190gr vegetables p.p. & 40gr fruit p.p.
Ingredients
| 2 yellow kiwis |
| 200g whole-wheat couscous |
| 3 carrots |
| 200g broccoli |
| 1 cucumber |
| 1 onion |
| 3 sprigs fresh parsley |
| 3 sprigs fresh mint |
| 4 tablespoons olive oil |
| 2 (squeezed) limes |
| Pepper |
Preparation
- Place the couscous in a bowl of boiling water. Prepare according to instructions on the label. Leave to cool.
- Peel the carrots and cut into cubes. Cut the broccoli into very small bushes. Blanch the carrots and broccoli in boiling water for 3 minutes.
- Drain and rinse with cold water. Peel the yellow kiwis and cucumber and cut into cubes. Peel the onion and chop finely.
- Pick the leaves of the herbs and chop finely. Mix the oil, lime juice and pepper. Put all the vegetables and the kiwi in a large salad bowl. Add the herbs and dressing. Mix well.
- Leave to cool in the fridge for a few hours and serve.
