Italian salad with grilled sweet onion

265gr vegetables p.p.
Ingredients
2 persons
3 sweet onions |
125g chestnut mushrooms |
100g washed spinach |
4 sun-dried tomatoes |
1 teaspoon honey |
pepper |
2 tablespoons olive oil |
1/2 tablespoon lemon juice |
Preparation
1. Peel the sweet onions and cut each onion into 8 segments (leaving the stalk whole).
2. Wipe the mushrooms clean with a paper towel or mushroom brush.
3. Heat a grill pan (or a frying pan).
4. Brush the grill pan with some oil (use max. 1 tbs. oil) and grill the onion with the whole mushrooms over medium heat for about 10 minutes until tender and nicely browned all over. Turn the vegetables regularly.
5. Meanwhile, cut the sun-dried tomatoes into strips.
6. Whisk a dressing of 1 tablespoon olive oil, lemon juice and honey and season with freshly ground pepper.
7. Divide the spinach with sun-dried tomatoes between 2 plates. Drizzle the dressing on top. Spoon the grilled onion and mushrooms still warm over the salad and serve immediately. Enjoy your meal!
