Meal salad with green beans

Ingredients
2 persons
400 grams of green beans |
400 grams of (small) potatoes |
2 eggs |
40 grams of walnuts |
10 sprigs of chives |
1 tablespoon of vinegar |
1 teaspoon of mustard |
1 tablespoon of (nut) oil |
hand of rocket salad |
Preparation
- Clean the green beans and break them into pieces.
- Wash the potatoes and cut large ones into pieces.
- Boil the potatoes with the French beans for 10 minutes until just tender.
- Hard-boil the eggs.
- Roughly chop the walnuts.
- Wash and chop the chives.
- Make a dressing from the vinegar, 1 tablespoon of water, the mustard and the oil. Mix in the chives.
- Mix the dressing into the still-warm potatoes and French beans and leave to cool.
- Wash the rocket.
- Peel the eggs and cut into wedges.
- Mix everything together.
