Salad niçoise

Salad niçoise

290gr vegetables p.p.

Ingredients

2 persons

100 g mixed lettuce
8 cherry tomatoes
150 g (cooked
boiled) haricots verts
1 red onion
1 cold boiled potato
6 stuffed olives
pepper
1 green pepper
1 tablespoon olive oil
1 tablespoon lemon juice
100 g canned tuna in water
1 boiled egg
1 teaspoon coarse mustard

Preparation

1. Wash and dry the lettuce. Divide the lettuce between 2 plates.
2. Cut the cherry tomatoes in half.
3. Peel and chop the onion. Cut the onion into thin rings.
4. Cut the sweet pepper into thin strips.
5. Dice the potato.
6. Drain the tuna in a sieve.
7. Peel the egg and cut it in half.
7. In a small bowl, make a sauce with the lemon juice, olive oil, coarse mustard and freshly ground pepper.
8. Arrange tomatoes, onion, pepper, potato, olives, tuna, egg and haricots verts on the lettuce and drizzle the dressing over the salad. Enjoy!
