250gr vegetables p.p.

Ingredients

2 persons

piece of ginger root
1 pak choi
1 can of black beans (drained weight approx. 275g)
lemon juice
1 clove of garlic
½ red pepper
1 tablespoon of oil

Preparation

1. Clean the pak choi and cut the vegetable into strips.
2. Clean the garlic and cut the clove small.
3. Peel and grate the piece of ginger.
4. Cut the pepper into narrow rings.
5. Fry the garlic and ginger gently in the oil.
6. Add the pak choi and the rings of pepper and stir-fry for a few minutes.
7. Drain the black beans, rinse and stir into the pak choi.
8. Season the dish with some lemon juice.

Menu suggestion: Delicious with brown rice.
