Roman endive salad

150gr vegetables p.p.
Ingredients
2 persons
lemon juice |
300g chicory |
½ clove of garlic |
4 anchovy fillets (tin) |
5 sprigs of parsley |
Preparation
1. Wash the parsley and cut the herb small.
2. Chop the anchovies.
3. Squeeze the garlic on top and mash into a paste with a fork.
4. Stir in 1 tablespoon of water, lemon juice and pepper until a spicy sauce is formed.
5. Wash the chicory and cut the bushes into narrow strips. Mix in the parsley and the sauce.
Menu suggestion: Delicious with pork schnitzel and potatoes.
