Spring vegetable

315gr vegetables p.p.

Ingredients

2 persons

1 knife point grated lemon peel
1 tablespoon oil
2 spring onions (spring onions)
150 grams of mangetout
dill (fresh or frozen)
1 cucumber

Preparation

1. Shave part of the skin off the cucumber.
2. Halve the cucumber lengthwise, scraping out the seeds with a spoon.
3. Cut the halves into narrow strips.
4. Clean the mangetout and spring onions.
5. Halve the snow peas and cut the onions into rings.
6. Fry the onion rings in the oil until soft.
7. Add the snow peas and cucumber with a little water and cook the vegetables for a few minutes until tender.
8. Season the vegetables with some grated lemon zest and dill.

Menu suggestion: Delicious with stewed fish and mashed potatoes.
