Stir-fried carrots with snow peas

270gr vegetables p.p.
Ingredients
2 persons
piece of lemon peel |
1 tablespoon of liquid margarine |
400 grams of carrots |
100 grams of mangetout |
1 spring onion |
Preparation
1. Clean the carrots and cut them into 1 cm diagonal slices.
2. Clean the snow peas.
3. Cut the spring onion into rings.
4. Finely chop a piece of lemon peel.
5. Heat the margarine in a wok or frying pan and stir-fry the carrots in it for a few minutes.
6. Add the snow peas, spring onion, lemon zest and some water and simmer for about 7 minutes until tender.
7. Season the vegetables with some pepper.
Menu suggestion: Delicious with meatballs and mashed potatoes.
