Sugar-free apple-ginger jam

50gr fruit p.p.
Ingredients
100 g fresh ginger root |
1 kg apples |
1 tablespoon lemon juice |
powdered or liquid gelling agent of your choice |
15 ml liquid sweetener or 5 tablespoons powdered sweetener |
Preparation
Never made your own jam before? We'll help you! For this recipe for apple ginger jam (without sugar!), you will also need 2-3 jam jars.
- Clean jam jars and any lids with hot soda water. Use 1 tablespoon of soda to 1 litre of water. Rinse everything with clean, hot water. Drain the jars and lids upside down on a clean tea towel.
- Peel the ginger root and cut the ginger very finely. Boil the ginger in 200 ml of water for 20 minutes.
- Peel the apples, remove the cores and cut the apples into pieces. Bring the apples and their liquid to the boil with the ginger and lemon juice.
- Add the gelling agent to the fruit puree. Cook the mixture, stirring, for 1 minute.
- Stir in the sweetener from the heat.
- Fill clean jars to the brim with the boiling jam and close the jars immediately with clean twist-off lids. Then immediately turn the jars upside down.
- After about 10 minutes, you will hear a `plop'. A vacuum has been created, greatly reducing the chances of spoilage. After half an hour, put the jars back upright.
