Summer beets with aniseed

255gr vegetables p.p.
Ingredients
2 persons
½ teaspoon anise seeds |
approx. 1 tablespoon vinegar |
1 tablespoon oil |
½ shallot |
500g cooked red beets |
Preparation
1. Cut the ends off the beets and poach off the skin. Cut the beets into thin wedges.
2. Cut the piece of shallot very small.
3. Mix the shallot, oil, vinegar and some pepper into the beetroot segments.
4. Crush the aniseed seeds with a large knife. Mix the aniseed into the beetroot.
5. Add some more vinegar if necessary.
Menu suggestion: Delicious with lentils and potatoes.
