Burger with pepper salad

210gr vegetables p.p.
Ingredients
2 persons
2 onions |
15g fresh mint |
1 sweet pepper punto |
1 tablespoon olive oil |
2 whole-wheat rolls |
pepper |
1 tomato |
200g lean beef mince |
50g fresh goat cheese |
Preparation
1. Chop 1 onion very finely. Cut the second into wafer-thin rings and push them loose.
2. Pick off the mint leaves. Chop half very finely.
3. Halve the sweet pepper, remove stem and seeds, cut the flesh into squares.
4. Chop the tomato finely enough to use as a tomato dressing.
5. Mix the minced meat with the chopped onion, chopped mint, crumbled goat cheese and freshly ground pepper to taste. Form into 2 flat burgers. Brush them with some olive oil.
6. Preheat a grill pan dry and grill the burgers until brown and almost cooked, 5-6 minutes on each side.
7. Slice open the buns and grill them in the pan for 1 minute on each side to warm them up and get grill marks.
8. Mix the paprika with onion rings, mint leaves and tomato dressing.
9. Top the buns with pepper salad and a burger. Place the bread caps on top. Enjoy your meal!
