Italian meal salad with cumelo and spelt

Italian meal salad with cumelo and spelt
With seasonal products

15gr vegetables p.p. & 130gr fruit p.p.

Ingredients

300g spelt cereal
1 cumelo
1 green apple
8 radishes
4 tbsp olive oil
2-3 tbsp vinegar
1 tablespoon honey
1 lemon
5 sprigs basil
4 sprigs parsley
50g Parmigiano Reggiano 32+ or Grana Padano 32+
freshly ground pepper

Preparation

Weather or no weather, with this super-fresh cumelo salad, you'll always have 'the sunshine in your house! A meal salad with cumelo, apple, radish and spelt with a fresh dressing. Served with fresh herbs and Italian cheese.

  1. Make the dressing by mixing the olive oil, vinegar, honey, zest of half a lemon, juice of a quarter lemon and freshly ground pepper to taste.
  2. Cut the cumelo in half, remove the seeds and peel and dice.
  3. Slice the apple, remove the core and cut into equally sized cubes.
  4. Cut thin cubes of the radish, e.g. with a mandolin.
  5. Cook the spelt according to the instructions on the packet. Drain and leave to cool.
  6. Mix the spelt, cumelo, apple and dressing and season with freshly ground pepper.
  7. Finish the salad with the radish slices and chopped herbs. Finally, use a thin peeler to make cheese curls to finish.
