Italian meal salad with cumelo and spelt

15gr vegetables p.p. & 130gr fruit p.p.
Ingredients
300g spelt cereal |
1 cumelo |
1 green apple |
8 radishes |
4 tbsp olive oil |
2-3 tbsp vinegar |
1 tablespoon honey |
1 lemon |
5 sprigs basil |
4 sprigs parsley |
50g Parmigiano Reggiano 32+ or Grana Padano 32+ |
freshly ground pepper |
Preparation
Weather or no weather, with this super-fresh cumelo salad, you'll always have 'the sunshine in your house! A meal salad with cumelo, apple, radish and spelt with a fresh dressing. Served with fresh herbs and Italian cheese.
- Make the dressing by mixing the olive oil, vinegar, honey, zest of half a lemon, juice of a quarter lemon and freshly ground pepper to taste.
- Cut the cumelo in half, remove the seeds and peel and dice.
- Slice the apple, remove the core and cut into equally sized cubes.
- Cut thin cubes of the radish, e.g. with a mandolin.
- Cook the spelt according to the instructions on the packet. Drain and leave to cool.
- Mix the spelt, cumelo, apple and dressing and season with freshly ground pepper.
- Finish the salad with the radish slices and chopped herbs. Finally, use a thin peeler to make cheese curls to finish.
