Spinach stew from the Healthy Dutchies

225gr vegetables p.p. & 75gr fruit p.p.
Ingredients
1200g potatoes |
2 apples |
250g spinach |
fresh chives (as desired) |
400g cherry tomatoes |
400g lean beef mince |
1 egg |
2 onions |
1 garlic clove |
4 teaspoons mustard |
3 tablespoons olive oil |
Preparation
Feast for the whole family with this colourful stew with spinach and cherry tomatoes from the Healthy Dutchies.
- Preheat the oven to 200 degrees.
- Put the 400 grams of minced meat, 3 tablespoons of mustard, 1 onion, clove of garlic and 1 tablespoon of oil in the food processor and turn it into a fine mixture (or knead with your hands). You can now turn about 20 small meatballs and place them in a baking dish. Bake the meatballs for 20 minutes at 200 degrees in the oven.
- Peel the potatoes and bring to the boil, boil until soft and drain.
- Cut the tomatoes in half and the apples and 1 onion into small pieces. Fry the onion, apple and tomato in a tablespoon of oil, until the apples are soft and the tomatoes fall apart.
- Now use the food processor again or a masher and mash the potatoes with 1 tablespoon of mustard and a tablespoon of olive oil.
- Then add the raw spinach and chopped chives and mash well.
- Ladle the mash and garnish with the onion-tomato mixture. Serve meatballs with it on a skewer.

Note: this recipe is for two adults and two children. So make slightly more than the recipe for four adults. Adjust the quantities slightly for four adults.
