Golden apple pancake with banana sauce by Joke Boon

135gr fruit p.p.
Ingredients
200 ml almond drink |
2 apples (coarsely grated) |
2 ripe bananas |
100g sieved chickpea flour |
1 tsp ground turmeric |
1 tsp baking soda |
2 tbsp lemon juice |
¼ tsp ground ginger powder |
1 tsp freshly chopped mint |
1 tbsp olive oil |
Preparation
Start your day off right with this vegan apple pancake with banana sauce. A colourful recipe by Joke Boon.
1. Put the chickpea flour, turmeric and baking soda in a bowl.
2. Whisk in the almond drink with a whisk, then add the lemon juice. Spoon in the apple.
3. Heat a tablespoon of oil in a small frying pan and spoon 1/8 of the batter into the pan. Spread the batter over the bottom of the pan, using a spatula if necessary.
4. Fry for 3 minutes on low-medium heat, until the top is dry. Flip over and fry the other side for another 2 minutes, continuing in this way until you have 8 pancakes.
5. For the banana sauce, mash the bananas with the turmeric, ginger powder and lemon juice. Or use a hand blender for extra smooth results.
6. Spoon in the mint.
7. Place a pancake on a plate, spoon some banana sauce in the middle and spread in a layer over the pancake.
