Okrasoup with yellow split peas

420gr vegetables p.p.
Ingredients
2 persons
| 120g yellow split peas (pesi) |
| 1 bay leaf |
| 4 pimento grains |
| 1 onion |
| 1 carrot |
| 1 leek |
| 2 tablespoons oil |
| 150g okra or ochre |
| m ½ pepper |
| 1 can of diced tomatoes without salt |
| celery leaves |
| lemon juice |
Preparation
Many people in the Netherlands do not yet know okra, but in Suriname, for example, they feast on it. Try it, with this well-filling okra soup with yellow split peas!
- Wash the split peas. Boil the split peas in water with the bay leaf and allspice grains until tender.
- Peel and chop the onion.
- Clean the carrot and leek. Cut the carrot into slices and the leek into rings.
- Fry the onion, carrot and leek in the oil.
- Wash the ochre and cut into pieces if necessary.
- Cut the half pepper into strips.
- Add the ochre, cooked pesi with cooking liquid, pepper strips and diced tomatoes to the fried vegetables and cook until tender.
- Flavour the soup with generously chopped celery leaves and lemon juice.
