Oriental raw vegetable salad

245gr vegetables p.p.
Ingredients
2 persons
1 tablespoon sesame oil |
pinch of 5-spice powder |
1 spring onion |
2 teaspoons ginger syrup |
1 bunch of radish |
100g bean sprouts |
1 tablespoon lemon juice |
1 tablespoon cashew nuts |
100g carrots |
150g mangetout |
Preparation
1. Clean the vegetables.
2. Halve the snow peas. Cook the mangetout in little water for 2 minutes.
3. Put the bean sprouts in a colander and pour the peas with the cooking water over this.
4. Drain the vegetables.
5. Slice the carrots and cut the spring onion into narrow rings.
6. Whisk a dressing from the lemon juice, 1 tablespoon water, ginger syrup, sesame oil and 5 spice powder. 7. Mix the dressing into the vegetables.
8. Coarsely chop the cashew nuts and sprinkle them on top.
Menu suggestion: Delicious with strips of grilled chicken breast and wholemeal bread.
