Pepper salad with homemade croutons

Pepper salad with homemade croutons
With seasonal products

230gr vegetables p.p.

Ingredients

2 red peppers
1 cucumber
diced
12 vine cherry tomatoes
halved drizzled with ½ tsp olive oil
3 spring onions in rings
handful of flat parsley
finely chopped few mint leaves
3-4 slices (sourdough) wholemeal bread( torn into pieces)
freshly ground pepper
4 tbsp olive oil
½ tbsp lemon juice
½ tbsp honey
freshly ground pepper

Preparation

This pepper salad with croutons is ideal as a light lunch. And: you can very easily make the croutons yourself! Extra tasty!

  1. Preheat the oven to 200°C.
  2. Make the dressing by, for example, putting all the ingredients in a jar, shake well and set aside.
  3. Divide the tomatoes over a baking tray. Also place the 2 red peppers on the same baking tray. Put this in the oven and roast for about 25 minutes.
  4. Meanwhile, spread the wholemeal bread on a second baking tray and slide into the oven after 10 minutes above the vegetables. Do keep an eye on the wholemeal bread to make sure it doesn't burn.
  5. Remove the peppers and tomatoes from the oven, put the peppers in a plastic bag, tie up and leave to cool.
  6. Place the herbs together with the cucumber, spring onion and roasted tomatoes in a large bowl and pour the dressing on top. Let the dressing soak in. Leave some herbs for the garnish.
  7. Remove the wholemeal bread from the oven and add it to the bowl as well. Mix well to allow the wholemeal bread to absorb some of the dressing. Leave a few pieces for garnish.
  8. Carefully remove the peppers from the bag and peel off the skin. This is very easy now. Carefully tear open the peppers, remove the seeds and cut into strips. Add the pepper to the salad as well and mix again.
  9. Season with freshly ground pepper. Finish with the croutons and herbs.
