Chicken skewer with yellow kiwi and mango sauce

40gr vegetables p.p. & 70gr fruit p.p.

Ingredients

400g chicken skin fillet
1 onion
2 garlic cloves
1 or 2 lemons
1 teaspoon brown sugar
1 tablespoon sesame seeds
100ml water
1-2 teaspoons ground cumin
1 sprig of parsley
2 sprigs coriander
2 yellow kiwis
1/2 mango
The juice of 1/2 lime
1/2 onion
2 tablespoons olive oil

Preparation

  1. Peel the garlic and onion. Wash the parsley and coriander and pull the leaves off the sprigs. Cut the chicken thigh into equal pieces and place in a baking dish.
  2. Put the onion, garlic, sugar, water, sesame seeds, cumin, parsley leaves, coriander leaves from one sprig, lemon juice and a little grated lemon zest in the beaker of the blender. Mix, pour over the chicken and stir. Cover and leave to marinate in the fridge for 3 - 4 hours.
  3. Moisten wooden sticks with a little water and prick the meat onto the sticks.
  4. Heat a grill or pan with oil and fry the skewers (3 minutes per side).
  5. For the sauce: Peel the yellow kiwis and mango and cut into small cubes. Mix the cubes in a bowl with the lime juice, olive oil, onion and remaining chopped coriander.
  6. Pour the sauce over the skewers.

Menu suggestion: Serve the skewers with potatoes and cauliflower from the oven. This already gives you 210 grams of vegetables and 70 grams of fruit per person.

Tip: You can also use other meat such as lamb, veal or pork. If the meat is a bit tough, let it marinate in the fridge for 12 hours until it softens.
