Colourful tomato salad with different types of tomatoes

Ingredients
2 persons
500 gr tomatoes (use different sizes |
colours and shapes to make your salad pop!) |
juice of 1 lemon |
1 tbsp extra virgin olive oil |
1 tbsp white balsamic vinegar (or another vinegar) |
black pepper |
1/2 cucumber |
Preparation
- Wash the cucumber and cut in half lengthwise. Chop the halves into smaller pieces.
- Wash all the tomatoes and cut them into different sizes. The more shapes, sizes and colours you have the prettier your salad will be. And because of the different flavours, your salad will also have more variety.
- Squeeze the lemon and mix with the olive oil and vinegar to make a vinaigrette. Taste and add freshly ground pepper to taste.
- Place the cucumber and all the tomatoes in a large bowl and mix well with the dressing. Shake until all tomatoes are coated with a thin layer of the dressing, taste again and add more freshly ground pepper if needed.
Variation tip: Chives go well with this and, of course, basil. Enjoy your meal!
